About me

Hi! I'm Jean Rodvold, RDN, LD, and I am the Registered Dietitian Nutritionist for the University of Minnesota-Duluth Dining Services. I have been at UMD since September 2012. Prior to then I was in the Twin Cities completing my undergraduate degree in Nutrition (yes I was a Gopher, sorry Bulldogs!) followed by an internship at the Mayo Clinic in Rochester, MN. I held a position at Regions Hospital as a Dietetic Technician during that time.

Being a Duluth native, I am happy to be back home, despite the long & harsh winters! My favorite aspect of Duluth is the vast trail systems and friendly running community. If you have never been near the lake for sunrise, you're missing one of the most tranquil experiences Duluth has to offer.

As a Dietitian, you may assume I am all carrot and celery sticks, but that is not the case. I like good food too! Moderation is my modo, I believe you can have your cake and eat it too. The most rewarding part of my position at UMD is seeing students succeed in reaching their health and nutrition goals. From the small things like eating a better breakfast to running their first marathon, seeing a clients journey to wellness is an inspiring experience.

I was hired by UMD Dining Services to be a free resource for students on campus. I'm happy to answer questions by email, meet with you in person once, or once a week! Contact me and we can start today!!
